I made them today using the <a href="http://www.cherrybrookkitchen.com/">Cherrybrook Kitchen Gluten Free Dreams Pancake and Waffle Mix</a> to surprise my husband with a rare Sunday morning breakfast in bed. He doesn't even have to eat gluten free, but he enjoyed them just as much as I did. <br />

<b>Makes: </b>7 pancakes<br />
<br />
<b>INGREDIENTS:</b><br />

</b><br />
<b>1 cup</b><a href="http://www.cherrybrookkitchen.com/"> Cherrybrook Kitchen Gluten Free Pancake</a> mix<br />
<b>1 cup </b>milk of choice ( I used vanilla almond milk<br />
<b>2 tsp</b> oil<br />
<b>1 TBS</b> flaxseed<br />
<b>2 </b>bananas, sliced,<br />
<b>1/4 cup</b> agave syrup<br />
<br />
<b>DIRECTIONS:</b><br />
<ol><li>In a medium size bowl, mix <b>pancake mix, milk, oil, flaxseed</b>, and <i>only</i> <b>one banana</b>.</li>
<li>Gently mix until smooth, yet slightly lumpy.</li>
<li>Allow to sit for 5 minutes</li>
<li>Spray large skillet with non-stick cooking spray and warm on medium low.</li>
<li>When fully heated, pour about 1/4 cup of batter in the skillet and cook until outsides are a goldern brown, then flip and cook the other side, about 2 minutes each side.</li>
<li>Serve warm on each plate.</li>
<li>Pour <b>agave syrup</b> on top, then garnish with remaining <b>banana slices</b>.</li>
<li>Sprinkle <b>brown sugar, cinnamon,</b> or <b>nutmeg</b> if you want extra sweetness.</li>
</ol><div><b>TIPS:</b></div><div>I don't know why, but ever since I began cooking at the tender age of nine, my first pancake is always a flop, so my advise is cook only pancake at the biginning. Then when you feel confident, only cook up to 3 or 4 so as not to overcrowd the skillet. Also, keep these pancakes small. The larger ones are harder to flip and don't cook all the way through. But that is only my unprofessional two-cents worth of cooking irresistable pancakes. I don't know about you, but when sweat drips from my brow, I don't want anything else but double scoops of cool and creamy, dairy-free ice cream topped on a sugar cone, even if summer passed and fall is <em>suppose </em>to be here. <br />

But alas, cones are a no-no on a gluten-free diet. There is as much gluten as there is sugar in a typical cone recipe. As if mocking me, there are displays of cones near the ice cream section at local grocery stores. If only there was a gluten-free ice cream cone. If companies can make GF cookies or bread, then by all means they can create a simple ice cream cone, for goodness sakes!<br />

And they have. As I explored the internet I found two companies who specialized in manufacturing GF cones. <a href="http://goldbaums.com/">Goldbaums,</a> a Brooklyn, NY based company provides six different selections of cones, from classic sugar cone to unique chocolate cones. Their cones are slightly sweet with a durable base to the last lick. I personally favor the waffle bowl. How can you not like a bowl you can eat at the end?<br />

And more locally,there is the natural, vegan <span style="font-family: "Times New Roman"; font-size: 12pt; mso-ansi-language: EN-US; mso-bidi-language: AR-SA; mso-fareast-font-family: "Times New Roman"; mso-fareast-language: EN-US;"><a href="http://www.edwardandsons.com/ldo_info.itml">Let's Do®...Gluten Free Ice Cream Cones</a>, found at my Scottsdale Whole Foods, which I recently purchased because I was out of the NY kind. (Another reason why I want to live in NY).</span><br />
<br />
When I first opened up the box of sugar cones, I heavily scooped my ice cream on the rice-based cone and savored every lick until I reached the cone. In silence a crunched into the crispy cone and entered into a moment of the dog days of summer in my childhood (before I found out the ill-fated gluten intolerance).<br />
<br />
Okay, it might have a subtle aftertaste that reminds me it's gluten-free, but eating ice cream cones is more of a nostalgic feeling than an actual hunger suppression. And just that moment, that single moment, I was in a peaceful world uninterrupted by food allergies and strict limitations. <br />

1 bell pepper, sliced<br />
1/2 cup fresh green beans<br />
1/2 cup fresh mushrooms<br />
1 carrot, sliced<br />
2 cups cooked rice<br />
<strong>Directions:</strong><br />
<ol><li>Press tofu by placing it between two towels on a baking sheet and put a few plates on top. Drain for 15 minutes</li>
<li>Meanwhile, in a small bowl whish ginger, soy sauce, vinegar, sugar, cornstarch and 1 cup of water; set aside.</li>
<li>Heat oil in a large skillet or wok over medium heat, then add vegetables. Stir-fry until vegetables are slighlty tender.</li>
<li>Slice tofu into 6 squares and add to skillet. Cook until golden brown, about 3-4 minutes.</li>
<li>Whisk the sauce again.</li>
<li>Gradually add it to the skillet, stirring constantly, adding more water if needed.</li>
<li>Thoroughly mix the ingredients until covered with sauce.</li>
<li>Serve warm over rice.</li>

Remember this takes practice, so for your first time baking <span id="SPELLING_ERROR_1" class="blsp-spelling-error">GF</span>, expect not-so-perfect results.<br /><br /><strong>INGREDIENTS</strong><br /><strong>1 cup</strong> Bob's Red Mill Gluten-Free All Purpose Flour<br /><strong>1 cup</strong> ground cornmeal<br /><strong>1 1/2 tsp</strong> baking powder<br /><strong>1/4 tsp.</strong> baking soda<br /><strong>1/4 cup</strong> sugar<br /><strong>1/2 tsp</strong> salt<br /><strong>2 tsp.</strong> garlic<br /><strong>1 tsp</strong> <span id="SPELLING_ERROR_2" class="blsp-spelling-error">Xanthan</span> gum<br /><strong>2 eggs</strong> or egg <span id="SPELLING_ERROR_3" class="blsp-spelling-error">replacer</span> equivalent<br /><strong>1 cup</strong> milk, room temperature, I used unsweetened almond milk<br /><strong>1/4 cup</strong> vegetable oil<br /><strong>1 small</strong> zucchini, shredded<br /><strong>1/4 cup</strong> chives, dried or fresh<br /><br /><strong>DIRECTIONS</strong><br /><ol><li>Preheat oven to 350 degrees F.</li><li>Lightly oil nonstick 8-inch loaf pan.</li><li>Sift <strong>flour, cornmeal,baking powder, baking soda, sugar, salt, garlic, <span id="SPELLING_ERROR_4" class="blsp-spelling-error">Xanthan</span> gum</strong> in a large glass bowl.</li><li>In another bowl, whisk the <strong>eggs </strong>until frothy, then mix in the<strong> milk</strong> and <strong>oil </strong>until blended.</li><li>Gradually add the dry ingredients to the liquid until thoroughly blended. Bake for 15 minutes or until tops are golden.</li><li><strong>Low Fat</strong>: Add 2 TBS Applesauce and 2 TBS oil instead of the 1/4 oil. </li><li><strong>No Sugar: </strong>Replace sugar with 1/4 agave or honey, but reduce the liquid by 2 TBS. Or what I did, deleted the sugar completely and <span id="SPELLING_ERROR_6" class="blsp-spelling-corrected">proceeded</span> with the low fat variation above. </li></ul><p><strong>TIPS:</strong></p><ul><li><strong>Too soggy:</strong> The outer crust is golden, but the center or bottom of the pan is too soggy, Put tin foil on top and increase the temperature by 25 degrees and bake another 3 to five minutes. </li><li><strong>Adjust to altitude:</strong> I lived in Colorado and then I lived in Florida so I know what a difference altitude makes. For higher altitude, gradually decrease liquid, 2 TBS at a time and increase temperature to 375 degrees.</li><li><strong>Babysit your oven: </strong>All ovens are different and temperamental, so for the first time observe closely how your oven bakes, then make adjustments if needed. I substituted 4 tablespoons of the oil with same amount of applesauce, then added two tablespoons of oil. </div><div> </div><div>Again. Another risk.</div><br /><div></div><br /><div>But I live dangerously. </div><br /><div></div><br /><div>I drop about a tablespoon's worth of dough on the sheet, purposely making them small. You see, my husband, Ted, is known for inhaling dozens of <a href="http://www.examiner.com/gluten-free-food-in-scottsdale/gluten-free-peanut-butter-cookies">cookies</a> in one setting, so I figured if I make them small, he will psychologically think he is getting more. Smart, I know. Deceptive, you bet.</div><br /><div></div><br /><div>I baked my first batch of dozen <a href="http://www.examiner.com/gluten-free-food-in-scottsdale/gluten-free-peanut-butter-cookies">cookies </a>in a small toaster oven instead of the oven. I live in Phoenix where it is 112 today. I have no interest adding heat to injury. </div><br /><div></div><br /><div>While I waited, I steal a bite from the<a href="http://www.examiner.com/gluten-free-food-in-scottsdale/gluten-free-peanut-butter-cookies"> cookie</a> dough. I know there is some medical study that warns about licking the bowl of raw cookie dough, but I didn't care. I had to taste the batter first. I am like the king's cup bearer. Taste the food first, then serve it, even if sickness or death is afflicted upon the cup bearer.</div><br /><div></div><br /><div>Ok. So I am exaggerating. I was just hungry.</div><br /><div></div><br /><div>After 8 minutes, the timer announced the <a href="http://www.examiner.com/gluten-free-food-in-scottsdale/gluten-free-peanut-butter-cookies">cookies</a> were done. Suddenly my husband appeared. Together we sampled the cookies.</div><br /><div></div><br /><div>Wow! It was not only good, but absolutely sinful. Of course I stopped at my first sample, but Ted assured additional samples were required.</div><br /><div></div><br /><div>There were some leftover by the time the in-laws arrived. Unfortunately they were stuffed from just enjoying lunch at an Italian restaurant, but after watching my husband inhale a few more, they took one.</div><br /><div></div><br /><div>Their response? Positive. Like me there were surprised. So,before I put the recipe to print, I test it amongst non-gluten-<span id="SPELLING_ERROR_1" class="blsp-spelling-error">freers</span> (<span id="SPELLING_ERROR_2" class="blsp-spelling-corrected">definition</span>: the <span id="SPELLING_ERROR_3" class="blsp-spelling-corrected">fortunate</span> people who can eat anything.)<br /><br />So this Saturday I prepared a <span id="SPELLING_ERROR_4" class="blsp-spelling-error">GF</span>, <span id="SPELLING_ERROR_5" class="blsp-spelling-error">DF</span>, <span id="SPELLING_ERROR_6" class="blsp-spelling-error">EF</span> carrot cake to bring to a graduation party. Before we arrived, I had my super-taste-tester husband sample a cupcake slathered with thick frosting.<br /><br />Slowly, he savors the bite. I eagerly waited for his reaction. Another bite. Still waiting. Then a slight grin spread upon his face. "These are terrible," he teased. (I hoped he was teasing.) "Yeah, you can't bring these to the party. They need to stay here so I can eat them all." He tried to keep a straight face as he inhaled the last crumb of the cake.<br /><br /><span id="SPELLING_ERROR_7" class="blsp-spelling-error">Ok</span>. It is the possibility that the Doc wont find anything. As morbid as that sounds, I want to hear something. An ulcer, cyst, irritation? You see, I have been suffering chronic pain for nearly a year now. Gnawing burn in my upper Gi, followed by intense bloating of my entire stomach. When an episode occurs, which could occur at any unpredictable time, I would be bent over in a fetal position emerged in my own tears of pain and aggravation.</span></div><div><span style="WHITE-SPACE: pre" class="Apple-tab-span"><span class="Apple-style-span"><span style="WHITE-SPACE: pre" class="Apple-tab-span"></span></span></span><span class="Apple-style-span" style="font-family:arial;">What is it?
